Sweet Potato Casserole

4-5 medium sized sweet potatoes

3/4 cup sugar
1/2 t. vanilla
1/4 lb. butter
 
Boil potatoes until soft.  Peel and mash, adding the above ingredients.  Place in 1 1/2 quart casserole and top with little marshmallows.  Heat in a moderate oven until marshmallows are golden brown.
 
Sweet potatoes are a great source of vitamin A and always good this time of year.  If your little ones turn their nose up at these gems, try this recipe.  It's so yummy, it taste like pie without the crust.
